How do I account for baking waste when pricing?

Use the ingredient amounts you actually expect to consume and the number of portions you can actually sell. Add any predictable waste cost not already included in the ingredient inputs, then calculate the full order quote before dividing it by sellable yield. Do not count the same waste twice.

Separate extra ingredients from lost yield

If you routinely use more dough than the ideal recipe amount, enter the expected amount actually used or add the extra cost once to Other order costs. If a batch produces fewer saleable cookies, lower the yield. One raises the whole-order cost; the other spreads that cost across fewer items.

See a yield-only example

A cookie batch has $33 of entered cost and a 35% target gross margin. Its unrounded whole-batch quote is $33 ÷ 0.65, about $50.7692, displayed as $50.77. At 24 sellable cookies, the displayed dozen figure is $25.39. If only 20 are sellable while entered costs stay $33, the whole-batch quote stays $50.77 but the displayed dozen figure rises to $30.47.

Price the order you can fulfill

If the customer needs 24 cookies and you expect only 20 sellable cookies per batch, you may need another batch or a different production plan. Change the batch count and expected yield accordingly; merely changing the per-dozen figure does not create the missing cookies.

Avoid double-counting

If the ingredient amounts already include extra dough used for breakage, do not add the same dough as a separate waste charge. Record discarded decorations, damaged boxes, or unsellable samples only if they are expected and not already included elsewhere.

Keep estimates current

Track actual sellable output for several comparable orders. Revisit your assumed yield when recipe size, equipment, packaging, or staff changes. A cost-based result still needs a market and customer-commitment check.
